- Baby spinach leaves are the best choice. As leaves get larger they can be tough and stringy.
- Spinach stored under lights in the grocery store have more nutrients then spinach stored in the dark.
- Cooking or juicing spinach will release nutrients! Raw spinach is more difficult for your body to break down and release nutrients.
- Fresh spinach is better! Freezing spinach reduces the health benefits.
- Organic spinach is a wise choice as leaves are exposed to pesticides and may be difficult to wash off.
- Spinach is good for your eyes (Vitamins) and is also good for promoting healthy digestion (i.e. fiber).
- Oxalic acid naturally found in spinach blocks the absorption of calcium and iron. Vitamin C is a way to increase the effect of oxalic acid.
